Courgette Soup
Zucchini Bread


Courgette Pickle


500ml cider vinegar
120gms sugar
1 1/2 tsp mustard seeds crushed
1 1/2 tsp dry mustard
1 .tsp tumeric

300gms courgettes
2 .tbsp salt
1 .small onion


1) Slice Courgettes thinly diagonally, slice onion very thinly. Add salt. Cover with very cold water and stir to disolve.

2) After 1 hr, drain and dry (Salad spinner) or by hand between towels.

3) Simmer pickling mix for 3 minutes, cool warm to touch.

3) Add courgettes to cooled liquid in a bowl. Transfer to pickle jars. Cover and refrigerate for at least a day.

Will keep indefinately in the fridge.

To sterilize jars, place in a moderate oven for 5 minutes.
