6 Large Carrots
Carrots with vinegar
2 bay leaves
3 tablespoons wine vinegar
1/2 minced onion
3 crushed juniper berries
a little salt and pepper
- Peel six large carrots, cut them into four lengthways, and remove some
of the hard centre core. Put into a shallow saucepan and just cover with the water and above ingredients.
Bring to the boil and boil fiercely until the liquid has gone and the
carrots are cooked. Sprinkle with chopped parsley and serve hot or cold.
